Banana Bread Skulls (and other holiday shapes)

Ingredients

1 egg

1/2 cup sugar

1/4 cup oil

3 bananas, mashed (approx. 1 1/2 cups)

1 cup flour

1/2 tsp. Salt

1/2 tsp. Baking soda

1/4 tsp. Baking powder

1/2 tsp. Vanilla

1/4 tsp. Cinnamon

1/8 cup chocolate chips (optional)

Directions

Preheat oven to 325 degrees F. Spray your pan with cooking spray and put it on a sheet pan.

Mix the wet ingredients in one bowl and dry in another. Incorporate dry into wet a little at a time until mixed. Stir in the chips if using.

Scoop a rounded 1/3 cup (3.25 oz. disher) of batter into each skull and use the back of a spoon to spread it out. Do not overfill.

Bake 27 minutes or until a skewer inserted into the top comes out mostly clean. Let cool 5 minutes in the pan. Put a cooling rack on the pan, then flip.

Eat warm.

You can obviously use other molded pans that are around the same size.

*You can replace one banana with other thick, cooked and pureed fruit, like fig (approx. 1/2 cup).
